An osteotome cuts bone along a controlled plane. Because the bevel is symmetrical on both sides, it travels straight through the bone rather than deflecting, which makes it the instrument for planned cuts — osteotomy, graft harvest and bone shaping. A chisel, bevelled on one face only, deflects away from the flat side and is used for shaving and removing bone from a surface.
That distinction is the single most misunderstood point in ordering: osteotomes and chisels are not interchangeable, and catalogs should describe the bevel explicitly. Blade width is the other ordering variable, running from a few millimetres to 50 mm.
